I just started a new job last week, so it’s been a while since I’ve taken the time to snap a picture and write about it here.  But that doesn’t mean I’m not cooking - in fact, I’m cooking just as often as I was during my “funemployment.” Weekly meal planning helps, and I’m enjoying buying produce at Whole Foods again. And I love having leftovers for lunch instead of scrambling to run out and grab something when everyone else in the Loop is doing the same thing.  

Dishes like this couscous salad from Whole Foods make great next-day lunches.  The flavors marry overnight and often taste better the following day. While you can warm it up in the microwave, it’s also perfectly fine straight out of the office fridge.
